CAROLE WALTER has studied with famous pastry chefs in the United States, France, Austria, Italy, and Denmark and has taught baking classes for more than twenty years at places such as Sur La Table and Williams-Sonoma (for her current teaching schedule, visit www.carolewalter.com). A past president of the New York Association of Cooking Teachers and a charter member of the International Association of Culinary Professionals, Walter is the author of Great Cakes, Great Pies & Tarts, and Great Cookies. She lives in northern New Jersey with her husband, Gene. This is her fourth book.

Carole Walters is high up there in my personal pastry pantheon. Especially since she remembers to mention small, but basic steps critical to success. And it gracious enough to avoid mentioning that some of them contradict other author's bad advice.To get to the book itself - it's ideal for people who love to bake but have limited time and/or kitchen space: No special equipment, no multiple preparations, no critical timing, nothing requiring multiple components needing to be combined. My only quibble with this book is that the recipes are, at least in my opinion, overly sweet.

I've baked over 30 recipes out of this book and each one was perfect (aside from a couple of user errors). Walter gives great tips on how to handle ingredients to get the best end product, and I religiously follow each step. If Walter says to blend something for 3 minutes, she's always right. I usually take my baked items in for my colleagues at work. Many of them are from or have lived in Europe, and they rave that they like my baked goods much more than typical American pastries, cakes, etc. because they're not too sweet. Walter has taken great care to balance the ingredients and make the flavors the triumphal centerpiece. The pound cake was a particular hit with my Baltic region colleagues - it reminded them of the cakes they ate as children. My personal favorites are the coffee cakes and italian slices. I've got my next recipe already picked out - Classic Brioche - which I'll make tomorrow if we're snowed in again! I also plan to get Walter's other books on cakes, pies and cookies.

I've only made the cakes in this book so far, and while this a lovely addition to my shelf, the reason I'm not giving this 5 stars is because the baking TIMES are WAY off. If you really do bake your cakes for the hour-and-fifteen minutes called for in most of these recipes, you will end up with a dry and overbaked product. While I'm aware that ovens vary, I've never had this trouble with any similar book. Most often, forty-five minutes does the trick.

Carole Walter has taught for years and it shows in the book. Clear instructions, good results. I was hoping for more interesting recipes but that's my fault for not checking first. It's unfair to blame the author because she didn't write the book i was hoping for. I think that this would be an excellent choice for anyone who is new to baking and wants to try some new techniques. Still, for my baking money Maida Heater is the way to go.

It would be difficult to expound on Laura Stokes-Gray "Cookbook Lover's" comprehensive review. The primary weakness of the book is the dearth of photographs - don't get me wrong, there are photos, but a rather small selection considering the number of recipes. Luckily, one of Walters' greatest strengths is her detailed instructions. The recipe measurements are given in cups and teaspoons, not grams and mL, and they are geared toward home bakers. Each recipe has a difficulty rating, with detailed prep instructions listed in a sidebar.A couple of cons: the book could have used just a few more pictures of some of the more complex or interesting finished desserts. It could also use more careful editing. For example, it seems like the editors just cut and pasted the instructions for Carol's Favorite Streusel into the other streusel recipes, even though they do not make double batches of streusel.I think that some of the most useful chapters in the book are those dealing with strudel and danish pastry. Walter provides lengthy, detailed instructions for these baked goods, plus mouth-watering recipes. A wonderful, wonderful book. I've baked about 12 things out of it, and everything has been very well received.

I haven't found something I didn't like. Well worth the price.

Confession . . . I like cookbooks. But I love this cookbook! Great recipes that are diverse in nature and offer substitute options for the novice baker afraid to use raspberries instead of blueberries for example. Easy to follow directions; even if you are not a baker. My husband and son both give the results a thumbs up and I am not always known for my baking; I like to keep it simple. I am, however, an avid cook and appreciate this cookbook.

Excellent home baking book especially for traditional sweet yeast dough.
