Insisting on better quality and approaching meat with a degree of understanding will lead butchers and ultimately the meat industry to raise animals in a humane and sustainable way. I give a recipe for rack of lamb because it's one of those cuts that intimidates but that is really very simple. The whole trick is cooking it to the right degree of doneness. This is very easy to determine by pressing against the two ends of the rack and taking it out of the oven as soon as the two ends feel firm and bounce back to the touch. --James Peterson Makes 4 main-course servings Ingredients 1 American rack of lamb (8 chops) or 2 New Zealand racks of lamb (16 chops total), about 1 1/2 pounds, ribs frenched Salt Pepper 1 pound lamb stew meat or trimmings, cut into 1/2-inch strips 1/2 onion, coarsely chopped 2 cups chicken broth Let the rack(s) come to room temperature and season all over with salt and pepper. Preheat the oven to 450°F. Spread the stew meat and onion on the bottom of a roasting pan just large enough to hold the rack(s). Place the rack(s) on top. Slide the pan into the oven and roast for about 25 minutes, or until an instant-read thermometer inserted into the center of the roast without touching bone reads 125°F to 130°F or until the meat feels firm when you press both ends of the rack(s). Transfer the rack(s) to a platter or cutting board, tent loosely with aluminum foil, and let rest for 15 minutes before carving. While the rack(s) are resting, make the jus. Put the roasting pan on the stove top over high heat and stir around the pieces of meat until the meat is browned and any juices have caramelized on the bottom of the pan. Discard the fat and return the pan to high heat. Deglaze the pan with 1/2 cup of the broth, scraping up any brown bits on the bottom of the pan with a wooden spoon. Boil down the broth until it caramelizes into a crusty brown layer with a layer of clear fat on top. Pour off the fat, return the pan to high heat, and deglaze the pan with a second 1/2 cup broth, again boiling it down. Deglaze the pan with the remaining 1 cup broth, stirring until the crust has dissolved into the liquid, and then strain the liquid through a fine-mesh strainer into a warmed sauceboat. Carve the rack(s), cutting between the ribs. Pass the jus at the table.

I own almost all of Peterson's books. He is truly a master of teaching how to cook. His recipes focus on the most basic techniques and using the natural flavors of the foods themselves to make them stand out. I have never found better recipes for stews, pot roast, steak, etc. No celebrity chef will teach you the way Peterson can. You cannot go wrong with any of his books.So on to Meat.This is a very good kitchen education on meat. You will learn all of the basics about how to grill, braise, sauté, etc. The photos are marvelous and the recipes are very good. There's literally every type of meat you can cook here--squab, rabbit, brains, kidneys, I mean it goes on forever.There's not much contained in here that is not contained in his work Cooking, though. It seemed like he used this book more as a medium for showing off his photography than for delivering new recipes. There are a few, certainly, but goose with sauerkraut, that's not too innovative, and few of us really want to know how to cook brains. There's a great recipe for if you can find a really old rabbit, which Peterson acknowledges is close to impossible.So I enjoyed reading it and I will keep it. But this is not in-depth like Glorious French Food: A Fresh Approach to the Classics or Sauces: Classical and Contemporary Sauce Making, which really get into the explanations about how and why you cook a certain way. It's sort of like he took out the meat recipes from Cooking, added maybe a couple dozen useful new recipes, and some really pretty photos.But I will end the review on a high note. If you haven't read Peterson before and you all you want is a book on cooking meat, this is it, you'll love it. If you need a new cook book and don't know where to start, start with Cooking--that book changed my life. If you have Cookingand you want more in-depth information about meat, you'll find a few bits here and there that you'll like. If you are really hungry for an in-depth education from Peterson, track down Glorious French Food: A Fresh Approach to the Classics--light on photos and heavy on teaching.Four stars because it's Peterson, and it's a great work. One star penalty for being a little redundant.

Jame's Peterson's "Meat: A Kitchen Education" is a remarkably useful book, chock-a-block full of useful information from a Master Butcher. You'll learn stuff about meat cuts you never knew, and if you pay attention the book will save you a ton of money in your shopping. Excellent reference work any serious chef's bookshelf, and IMO indispensable for more casual kitchens. A knowledge base that begs to be tapped.

Perfect for both the experienced and beginning cook.

Read it with interest, I learned things, but, to be honest, I just like reading cookbooks--almost like reading post-modern novels that have no plot. Will try a few recipes. Probably best for someone who is just getting into the kitchen but isn't overawed by having their steak bones frenched.

if you are a meat lover and cook a lot, this is a great book. good basic tips and has good background and understanding of meats. very useful and can be shared amongst family members for cooking tips. also a nice looking book on top of that.

A very personal look at Thomas Merton, as author Mary Gordon strives to discover the answer to the question, “What kind of writer was he?” Gordon examines Merton’s letters, autobiography, and journals, and his book My Argument with the Gestapo (the inclusion of this section was puzzling to me). There is no real narrative here: It is a series of somewhat choppy observations that seem to jump quickly from subject to subject. I see it as a bit startling for the casual reader to pick up, and it is definitely not for readers who are new to Merton. Some interesting observations, but a little too limited in scope for the reader seeking a wider view and more inspirational take on Merton. I received an advanced reader’s copy from NetGalley in exchange for a fair review of this title.

Mary Gordon paints Thomas Merton the monk-writer by opening to us his many journals and his correspondence. Here in September 1, 1949, we view Merton’s early declaration of his intention:“If I am to be a saint, I have not only to be a monk, which is what all monks must to do become saints, but I must also put down on paper what I have become. . . . It is not an easy vocation. To be as good a monk as I can, and to remain myself, and to write about it: to put myself down on paper . . . with the most complete simplicity and integrity, masking nothing . . . It is a kind of crucifixion.”We see Merton’s friendship with Czeslow Milosz develop later in the 1960s. Merton complains of his double censorship, first by the Catholic Church and then by the secular publishing world. It is a road he blazes nevertheless, while remaining loyal to both audiences as seen in his numerous books of poetry and creative prose (most published by New Directions Publishing) and in his religious examinations done through the Catholic publications.Mary Gordon culls from Merton’s seven volumes of journals his most penetrating self-insights. She advises us on his conflicted vision as writer, “…at the same time he is disgusted with himself and his writing, he feels a responsibility to continue”:“August 22, 1961I have a clear obligation to participate, as long as I can, and to extend my abilities, in every effort to help a spiritual and cultural renewal of our time. This is the task that has been given me, and hitherto I have not been clear about it:…by entering myself deeply into the disciplines and experience, not for myself only but for all my contemporaries who may be interested and inclined to listen. This for the restoration of man’s sanity and balance, that he may return to the ways of freedom and peace, if not in my time, at least some day soon.”Thomas Merton’s cultural and spiritual commitment is made clear here.Gordon offers this final praise, “The greatness of Thomas Merton: ardent, heartfelt, headlong. This is one of my favorite books. It is about a witch who turns a mother's children into food while they are out. The mother must know what child is what food in order to turn them back. It's not scary....more magical. Audrey Wood is such a wonderful writer. Don Wood writes similar books. They are so vidid that they almost look real. I loved this book and it will be a treasure to save forever. My children now in their 30's are reading it to their young children. It does not have to be a Halloween book. I would suggest 3 years and up.

Okay- so I was nervous about buying this book for my 3 year old because of the reviews that said the book is scary. It is not. Lol not in my opinion and not in my toddlers opinion either. This book is a fairy tale, super fun, sort of dark, easy and fun to read (and my son loves my heckedy peg voice) and it has amazing illustrations. Very beautiful. My son frequently walks around the house now saying "come on sweet chickens!" Haha which is a phrase heckedy peg says. After Christmas we read this every night for at least a month. Great book! Such a relief from the old happy go lucky standard toddler rhyming books. Blah I get tired of those- but this I could read over and over. I was so happy my son loves it, and I really don't think it's as "dark" as everyone makes it out to be- great buy!

AMAZING book! I only remember a handful of books from my childhood and this is one of them. The children are named after the days of the week (kids get practice hearing them, older children can predict what the rest of the children are named). Spoiler alert- the witch turns them into different foods and the mom has to correctlyguess which one is each child. Easy to make interactive with a child and have them help guess which food is which child.The illustrations are so beautiful and moving! Each one is a work of art. You can read it multiple times and still discover new details in the artwork.A few people said their book arrived damaged. Mine arrived in perfect condition. No issues for me!Love it!

This was one of my favorite books when I was a very young girl, to this day it is still one of my favorites. I bought this so I could pass it on to my kids. I adore the determination of a mothers love to get her kids back from the wicked witch. The paintings in this book was one of the main reasons why I have an extreme love for oil based paintings. I also bought the book "King Bidgood's in the Bathtub" the same time and it is just as amazing as Heckedy Peg. I just wish I could of bought Heckedy Peg in Hardcopy as I did with "King Bidgood's in the Bathtub." I bought the book in paperback and sadly it looked used and not brand new. I had to take a star off because of that but other than that the book itself is just wonderful.

I loved this book as a child and once i had my own - it was a must purchase. I realized that once I ordered, I still had my copy but I'm grateful to have two copies. The story is about love of a mother and knowing her children. It's fun and not scary and I just love it. It's a classic in my home.

Loved this book as a child, bought it here to share with my 6 year old son and his entire kindergarten class. He (and they) were just as enchanted as I remember being, and afterward, all enjoyed imitating Heckedy Peg's voice and hobbling around on their "peg" legs.

The story is great, but my copy is falling apart at the seams, has rips, places are taped, and there is writing throughout. How they thought this was in sellable condition, I will never know. Love the story, but my copy is a joke.

This book was purchased for a grandchild and was a book I had purchased and read to my children when they were young. I bought the book origionally for the beautiful illustrations; but it is also a very good fairy tale. The mother in the story knows and loves her children and is able at the end of the story to turn everything about because she knows them so well. The chapter "14 Tips to improve your overall game" was absolutely well worth buying the book. The drills actually make me enjoy my drilling sessions and have improved my game markedly.

Amazon kept including this book in its "recommendations" to me but I always put off reading the reviews and otherwise "researching" the book because its cover was, well, a bit off-putting. But a few weeks ago, I finally read the 5 or 6 reviews and was convinced to buy the book. I'm glad I did and can only echo the praise of the other reviewers.The artwork is detailed and realistic while exuding a warmth that makes the two main characters come across as my dear friends whose joy and happiness is important to me. The story and the artwork are beautiful, sweet and sexy. But with all of the graphic intensity of the love-making (Yes. Love-making. The intimacy of the nude scenes between Ev and Rick is much deeper and more meaningful that "just sex."), the artwork never seems to go beyond the bounds of what is right and true. I was never made to feel like a voyeur or "Peeping Tom."Through everything, the boys manage - somehow - to maintain some very real sense of wonder at the miracle of love and even a real sense of innocence on some level. At the same time, the artist manages to convey the boys' twinkling-eye humor and whimsicality. I was so impressed with this book, I read it twice on the day it arrived. Please ... let's have more from this artist/author.

Side by Side by Mioki is a very sweet story with all the zeal of young love. Mioki's comic style allows him to explore every side of the passionate love story of title characters, Rick and Evan. The artwork is bright and clean, with exceptional attention on the backgrounds as well as the men who's lives inhabit this story. The detail really drives home how much the two main characters love, need, and want each other. It's an intense passion that we all want in our own lives. Like a feel good movie or a great novel, Mioki draws you in, so you can experience all the rapture that this simple, yet amazing story has to tell.

Great artist, if you don't object to naked boys sharing themselves with each other, and a few select friends. A really good story, well handled. Got only four stars because I got the feeling that there was some suppression or reluctance that detracted from the otherwise easy flow of the story and artwork. Also, it didn't end the way I wanted it to!

The art is beautiful. I was expecting more story- it is fairly simple on that count. Do not expect a complicated plot. It is mostly about excuses to have many pages of well executed illustrations of graphic sex. The text size is a little small and difficult to read. At times I found myself pulling out a magnifying glass to read it. The faces are a little like the faces you have seen on old sewing catalogues from the 60s and 70s - beautiful but a little interchangeable. After a bit, the sex illustrations as skillfully as they are rendered- start to feel more like bodies having sex rather than like people having sex- which makes them a little less sexy and a little soulless. Perhaps a richer plot would have filled in that void. But the art is beautiful and inspiring for any illustrator who wants to improve their drawing skills. You will see these forms in pretty much every position you can imagine and the artist really knows his anatomy. You could probably use it as a figure drawing reference.

Oh my, if you like gay comics this is a must buy. Its not as exaggerated as those drawn by Patrick Fillion, but equally arousing.Its a simple tale of 2 boys from the same small town who grow up and move to the city and fall in love with each other. Excellent artwork, and I hope Mioki does a 2nd and 3rd and more books.

I love this so much! I want the third one to happen.

Fun book. Great art and storyline. It is very sexual. I have read this and the sequel and recommend them.

Matthew Burgess is the author of Enormous Smallness: A Story of E. E. Cummings, illustrated by Kris Di Giacomo. It's also a great choice for young word lovers as it is filled with wonderfully fun big words and rhyme. Any 3-5 year old learning to talk about feelings, and virtually every kid who has ever struggled with a sibling, will find much to connect to in this charming picture book.

I love this book because it names and externalizes something I think all kids (and their parents) struggle with....emotional regulation! My naming the bad mood as a sort of monster that comes to visit, and which is contagious, kids can see their own moods and others' moods as temporary states of being that will pass. I found the art to be really fun and imaginative and am already looking forward to the sequel!

As a fan of Matthew Burgess's other children's book on E.E Cummings, Enormous Smallness, I knew I'd love this book. It's sensitive and smart and a playful approach to dealing with others' tough feelings. The illustrations are beautiful, too.

Love this book! The wordplay is so smart and fun. The illustrations are just brilliant at capturing these characters and moods. And I love the colors!

A great story about our inner monsters and how to deal with them, when they come out. Really enjoyed the playfulness and wit of the text and love the charming illustrations. An instant favorite for me.

I don't want to take away from the tragic and compelling events of Hodor's life, but I found it hard to get into the flow of his life story. There are a few great moments, but there were a lot times where I felt like he was getting repetitive harping on the same point over and over again. As someone who had access to the greatest maesters in the realm as teachers, I just expected a bit more literary prowess.When I think of other autobiographies by well known figures like Groot's "Who is Groot?" and Pikachu's "A Peek Into the Pokeball" I can't help but feel that there are better ways to spend my valuable reading time.

An emotional roller coaster from start to finish. You'll laugh, you'll cry, you'll grab a snack. I couldn't have felt more in this man's life even if Bran had a GoPro strapped to his head. And I don't want to give anything away, but the part where he says 'Hodor' gave me chills.

This book was a total page turner from the beginning. I had had crippling depression, and was on the verge of committing suicide. This book was so good, that it felt as if Hodor himself jumped out of the book, and took the gun from my hand. He then proceeded to penetrate me. I didn't know I could like a man like that.

So enchanting I’ve returned my cable box. If you haven’t read this, put on a pot of coffee and enjoy the ride. I really hope he continues to delve into a literary mindset. So many chills!
